Farm-to-Table Harvest Vegetable Bowl with Herb Vinaigrette

This organic harvest bowl highlights vegetables straight from the farm and brings simple, nourishing flavors to the table. It’s a perfect example of how sustainable farming supports both healthy communities and ethical food systems.

Ingredients (Serves 2–4)
Fresh from the Farm
2 cups organic mixed greens (kale, spinach, arugula, or lettuce)
1 cup cherry tomatoes, halved
1 cup organic carrots, sliced or shaved
1 cup seasonal vegetables (zucchini, squash, or sweet potatoes)
½ cup red onion, thinly sliced
Grains & Protein (Optional)
1 cup cooked organic quinoa or farro
½ cup chickpeas or white beans (organic, cooked)
Herb Vinaigrette
¼ cup extra virgin olive oil
2 tablespoons apple cider vinegar or fresh lemon juice
1 tablespoon fresh herbs (parsley, basil, or dill), finely chopped
1 teaspoon raw honey or maple syrup
Salt and pepper to taste
Instructions
Prepare the Vegetables
Wash all produce thoroughly. If using root or hearty vegetables, lightly roast them with olive oil at 400°F (205°C) for 20–25 minutes until tender.Cook the Grain
Prepare quinoa or farro according to package instructions. Let cool slightly.Make the Herb Vinaigrette
Whisk together olive oil, vinegar or lemon juice, herbs, honey, salt, and pepper until well combined.Assemble the Bowl
Start with a base of mixed greens, then layer grains, roasted vegetables, fresh vegetables, and beans.Finish & Serve
Drizzle with herb vinaigrette and toss gently. Serve fresh and enjoy.
